Why it happens

Two forces work against a commercial kitchen line:

Grease. Even with good practices, grease goes down the line as warm liquid and hardens as it cools underground. It coats the pipe wall and narrows the line a little more every day.

Volume. A busy kitchen moves more water, food solids, and debris through its drains in a single week than a house does in months. Floor sinks and trench drains catch straws, caps, produce bits, and more.
